Directions:Combine sugar and yeast and add to the 1/2 cup of warm water and let sit for 10 to 15 minutes until it is foamy.
Combine flour and salt and make a well in the center. Pour the yeast mixture into the well and combine with the water and milk and mix until the sides of the bowl are clean. Knead into a smooth dough, smooth with olive oil, cover with a towel and leave in a warm place to rise and double in size (2 to 4 hours). Punch the dough down and shape and smooth into orange size balls. Cover with a clean cloth and let rise at least 30 minutes. Roll the balls into 1/4 inch thick circles and let rise again for another 30 minutes. Heat oven to 475º. Bake the loaves directly on the rack of the oven for 2 to 5 minutes until slightly browned. |

Notes: Diran gave me his mother's (Jamile Ibrahim Saifi) recipe for Arabic bread. At her home in Bichmezzine Lebanon, she had an outdoor stone oven where she baked her bread.
