"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
4 large baking potatoes
1 c sour cream
1 package Hidden Valley Ranch dressing mix
1 package shredded cheddar cheese
1/4 c Hormel real bacon bits
1/2 tsp garlic powder
1 tbsp parsley
salt & pepper to taste

Directions:
Directions:
Bake potatoes in conventional oven until done (DO NOT use a microwave as this makes the skins too flimsy.) Once cooked, cut potatoes into halves & scoop out the middles leaving enough around the edges to make a wall. Put scooped out middles into mixing bowl & mash. Add sour cream, dressing mix, parsley, garlic powder, salt, & pepper. Mix well. Add bacon bits & 1/2 the package of shredded cheese & mix. Fill each potato half with the mashed mix. Bake at 400º F for approximately 10-15 mins or until cheese is melted. Remove from oven & top each potato with more cheese. Serve immediately.
