3 egg whites
1 c. sugar
2 c. ground nuts (hazelnut, almond, etc)
1 T. Peanut Oil
1 t. Vanilla Extract

Directions:
Directions:
Whip egg whites until foamy, then add sugar. Add ground nuts, mix well and scrape down bowl. Add oil and vanilla. Continue beating mixture about 5 minutes until well combined.

Line cookie sheet with parchment paper. Keep small bowl of water to wet your hands frequently so the mix doesn't stick. Shape into balls about 1" round. It is important that the cookies are the same size so they bake evenly.

Bake in preheated oven at 325º until golden, approximately 15-17 minutes. Allow to cool on the sheet.
