2 c uncooked instant rice
2 c water
3 T frozen orange juice concentrate, thawed
2 T soy sauce
1/2 t cornstarch
1/2 t garlic powder
1 lb chicken breast strips (or you can cut chicken breasts into desired bit size pieces)
1 bag frozen broccoli, carrots and water chestnuts

Cook rice according to package instructions. Do not add salt.

In small bowl, mix orange juice, soy sauce, corn starch and garlic powder until smooth (add more of each ingredient to taste if desired).

Heat 10" non stick skillet over medium-high heat. Add chicken. Cook 5-8 minutes stirring frequently until chicken is no longer pink.

Stir in juice mixture and add vegetables. Reduce to medium heat, cover and cook 6-8 minutes stirring occasionally until vegetables are crisp and tender. Serve over rice.
