1 bunch whole fresh beets
orange marmalade
apple cider vinegar
crumbled rosemary
walnut pieces
mandarin oranges
crumbled bleu cheese

Directions:
Directions:
Clean beets, trimming off tops and leaving root end intact. Steam beets in steamer basket set in saucepan with enough water to almost reach bottom of steamer basket. Keep the water at simmer until knife easily pierces largest beet. Remove the beets and let cool. Rub skins off beets, remove tops and bottoms then cube. Dilute small amount of orange marmalade with equal amount apple cider vinegar and pour over diced beets.Stir in crumbled rosemary leaves gently then cover and refrigerate. Before serving put walnut pieces in small dry fry pan over low heat and stir for 5-10 minutes until warm and fragrant. When ready to serve, place beets in serving dish, arrange mandarin orange slices acound edge of dish and sprinkle with walnuts and crumbled bleu cheese.
