4 C green or red chard
cooking spray
1 C onions, chopped
3 cloves garlic, minced
6 oz chicken breast, cubed
2 T water
1 C Basmati rice, cooked
1 T soy sauce
1/2 C cheddar cheese, shredded

Directions:
Directions:
Cut stems and heavy veins from chard leaves and dice. Cut remaining leaves into 1/2" strips. Spray nonstick skillet with cooking spray. Cook chard stems, onion, garlic, and chicken over med heat for 8 minutes. Add leaves and 2 T water; cook another 3 minutes till chard is limp. Add rice and sprinkle with soy sauce and cook another 2 minutes.

Once I had a project to cook a different vegetable every week. This was my first recipe for chard...and still top of my list. It's tasty and very pretty with red chard. Try it!!
