Italian Corona Beans Recipe

1 pound dried Corona beans
1 onion, quartered
2 tsp dried sage, crumbled
4 garlic cloves, peeled (or more to taste)
1 tbsp oil oil, plus more for serving
salt and pepper
10 fresh sage leaves, optional
Chicken stock or broth

Directions:
Directions:
Sort beans and remove any debris. Rise, cover with water well above the beans, and soak overnight in refrigerator.

Drain, cover beans with chicken stock/broth and water so liquid is 1-inch above the beans. Add quartered onion, sage, garlic, olive oil. Simmer about one hour. Beans should NOT be mushy. You may have to cook longer.

Remove from heat and let cool in the cooking liquid. At this point, you can add salt and pepper.

When serving, drizzle each dish with olive oil and serve

This is really good, but I suggest you add much more garlic and spices. You may want to add panchetta, ham, or bacon for more flavor.
