Ingredients:  
1 2/3 c flour
2 tsp baking powder
1 1/4 tsp cinnamon
1/2 tsp allspice
1/4 tsp salt
2 beaten eggs
1 c mashed cooked acorn, butternut or other squash (1 12 oz squash) Frozen is okay
3/4 c maple syrup
1/3 c cooking oil
1 tsp vanilla
1/2 c chopped pecans
1/2 raisins or cranberries (optional)

In large bowl, combine dry ingredients. Make a well. In medium bowl combine eggs, squash, syrup, oil and vanilla. Add all at once to flour mixture. Stir just until moistened. Fold in pecans and raisins if desired. Batter should be lumpy. Fill each muffin cup 3/4 full. Bake at 375º for 18-20 minutes or until wooden toothpick comes out clean. Serve warm with butter.
