3 eggs
1/2 c cooking oil
1 tsp almond extract
2 tsp cinnamon
1 tsp baking soda
1/2 tsp cloves
1 1/3 c sugar
1/2 c orange juice
2 1/2 c flour
2 tsp baking powder
1 tsp salt
1 1/2 c shredded zucchini

Caramel Frosting
1 c packed brown sugar
1/4 c milk
1 1/2 - 2 c confectioners sugar
1/2 c butter
1 tsp vanilla

Directions:
Directions:
In mixing bowl beat eggs, sugar, oil, orange juice and almond extract. Combine dry ingredients and add to egg mixture. Mix well. Add zucchini and mix well. Fill muffin cups 2/3 full. Bake at 350º for 20-25 minutes or until cupcakes test done. Cool for 10 minutes before removing to wire rack. For frosting, combine brown sugar, butter and milk in saucepan. Bring to a boil over medium heat. Cook and stir for 2 minutes. Remove from heat and stir in vanilla. Cool to lukewarm. Gradually beat in powdered sugar until frosting reaches spreading consistency.
