2 c flour
1 c quick cooking oats
4 tsp. baking powder
1 tsp. salt
2 1/2 tsp. pumpkin pie spice
4 eggs
1 c packed brown sugar
1/2 c canola oil
1/2 c water
1 can solid pack pumpkin (16 oz)

Icing
1 pkg. cream cheese (8 oz) softened
1/4 c. butter
4 c. confectioners sugar
1 tsp. vanilla

Preheat oven to 350º. Line 24 muffin tins with paper liners. Mix dry ingredients in a medium bowl. Set aside. In a mixer, beat eggs, brown sugar, and oil until light and fluffy. Add water and pumpkin; mix well. Stir in dry ingredients. Fill muffin tins 2/3 full. Bake about 15 minutes or until tester comes out clean.

These are also great without the icing. If icing, prepare while muffins are cooling and ice when cool. Store muffins in refrigerator.
