1 1/2 cups water
2 oranges, peeled and sectioned
1/4 cup thinly sliced rind
4 boneless chicken breasts
1/4 tsp each salt and pepper
2 tbsp flour
2 tbsp butter
2 shallots finely chopped
1/4 tsp dried tarragon
1 cup fresh orange juice
1/2 tsp chicken bouillon

Directions:
Directions:
Bring water and rind to a simmer in saucepan
simmer 15 min drain and set aside
season chicken with salt, pepper coat with flour
heat 1 tbsp butter in a nonstick skillet. add shallots, chicken cook 3-4 min per side. Add tarragon, juice and bullion. Cook 7 min turning once until chicken is no longer pink inside, put on a plate
Add orange sections and remaining butter to skillet. Gently heat and stir until butter blends into sauce. Spoon over chicken and top with reserve rind
