Ingredients: 1 or 2 pork tenderloin (enough to feed 4) salt and freshly ground pepper 1 1/2 tbsp. butter 1/2 c. onions, finely choppped 1 tbsp. fresh rosemary,chopped 1/2 c. chicken broth 1/3 c. whole berry cranberry sauce 1 tbsp. balsamic vinegar

Directions:Preheat oven to 450º F.
Pat pork dry with paper towel. Season with salt and pepper.
Melt 1/2 tbsp. butter in heavy large ovenproof skillet over medium heat Sear pork on all sides, about 2 minutes a side. Using an oven mitt place skillet with the pork in oven.
Roast pork until temperature reaches 155ºF, about 10 minutes. USING AN OVEN MITT remove skillet from oven. Transfer pork to cutting board and tent with foil.
While meat is resting prepare the pan sauce. Keep oven mitt on the handle as it will be HOT. Melt remaining butter in skillet over medium heat. Add onion and rosemary;saute until soft,about 3 minutes.Add chicken broth,cranberrry sauce and vinegar and whisk to combine. Add any juices from meat board and simmer about 6-8 minutes to thicken. Slice pork on the diagonal and spoon sauce over. |

Notes: If you don't have a skillet that can go into the oven just sear meat in your skillet and then transfer meat to a roasting pan.
