Ingredients: 1/2 c. light brown sugar (firmly packed) 7 tbsp. regular oats (un-cooked) 1/3 c. all purpose flour 1/3 c. cold butter 2 small ripe bananas (mashed, about one cup). 2 large eggs 1/2 c. sugar 1/3 c. butter (melted) 1½ c. flour 1½ tsp. baking flour 3/4 tsp. baking soda 1/4 tsp. salt 1 c. pecans (toasted and chopped)

Directions:Combine first three ingredients. Cut in 1/3 c. butter with a pastry blender until crumbly, Chill streusel. Beat banana and the next three ingredients in a large mixing bowl at medium speed, with a mixer until smooth. Combine flour and the next three ingredients. Add to banana mixture, beat until moist. Stir in vanilla and pecans. Spoon batter into 3 mini disposable loaf pans. Sprinkle each loaf evenly with the streusel. Bake at 350º for 35 minutes. Cool on racks. |
