Nana's Banana Bread Recipe

6 ripe bananas
2 cups sugar
4 eggs
1 cup melted butter
2 teaspoons vanilla
2 teaspoons baking soda mixed into 1 tablespoon boiling water.
4 cups flour
1 cup crushed nuts if desired (optional)

Directions:
Directions:
Preheat oven to 300º
Mash bananas, mix in sugar, eggs, melted butter, and vanilla, mix well. Add flour, mix well. Mix together boiling water and baking soda. Add to mixture. Blend VERY well. (3 min. on high) Scrapping sides often. Fold in nuts if desired. Pour into 2 greased and floured loaf pans. Bake at 300º for 1 hour. Increase oven temp. to 350º. Bake for additional 15 minutes. Check with toothpick in the center...should come out clean. Remove from pans and let cool on wire rack.

This is my mothers recipe. I've never had any banana bread as good as hers. I think the trick is the boiling water and baking soda mixed in at the end.
