4 cloves garlic, minced
1 large onion, finely chopped
1 celery rib, finely chopped
1 carrot, finely chopped
2 T Worcestershire sauce
2 lbs. lean ground beef
1 lb. each, lean ground pork & veal
1 C fresh bread crumbs
1/2 C milk
3 eggs
1/3 to 1/2 C chopped parsley
1/3 cup ketchup

Directions:

1. In a skillet over medium heat, saute: garlic, onions, celery & carrot in butter until tender. Stir in salt/pepper & Worcestershire sauce. Remove from heat & set aside to cool.

2. In a large mixing bowl combine: the 3 meats, cooked vegetables, bread crumbs soaked in milk, eggs & parsley. Mix until thoroughly combined.

3. In a shallow baking pan, shape mixture into 2 loaves.

4. Bake at 350 degrees, for 1 hour. Spoon ketchup over loaves & bake an additional 30 minutes, or until a meat thermometer registers 155 degrees.
