1/2 C shortening
1 3/4 C sugar
2 eggs
1 1/2 C cake flour, unsifted
1 t soda
1/2 t salt
1/2 t nutmeg
1/2 t cinnamon
1/2 t allspice
1 C mashed avocado
1/3 C buttermilk
1/2 C raisins, nuts, or dates

Directions:
Directions:
Cream shortening and sugar till fluffy. Add eggs and beat thoroughly. Sift all dry ingred together. Add 4 T of flour mixture to creamed mixture. Dredge raisins or nuts in 2 T flour. Alternately add avocado, buttermilk, and flour. Stir in nuts or raisins. Bake in a greased and floured loaf pan or 2 9" layer pans @350 for approximately 45 minutes.

One of my junior high students brought me this recipe and a cake many years ago in San Antonio. It's very good, and I've never seen another like it...one of many fond memories of South San.
