1 Package 15 Bean Soup Mix, 1/2 package small navy beans, rinsed and pre-soaked over night
3 cups diced ham
1 large onion diced
2 or 3 stalks celery with the leaves, sliced
1 diced carrot (optional)
1 bay leaf
1 tablespoon butter
1 tablespoon olive oil

Directions:
Directions:
Drain and rinse the beans that have been soaking overnight and set aside. Add the butter and olive oil to your large stock pot, using medium heat until butter is melted. Add the onion, celery and carrot to the pot and saute until the vegetables are just barely tender. Add the ham stock, bay leaf and ham to the pot and bring to a boil. Turn heat down just enough so it has a nice boil, but doesn't boil over. Cook until beans are tender-about 1 hour.
Serve with a nice crusty bread.
