1 unbaked pastry shell (9 in.)
3 eggs
1 and 1/2 c. canned pumpkin
1-third cup sugar
1 and one-half tsp. cinnamon
1-half tsp. ginger
1-fourth teaspoon nutmeg
1-half tsp. salt
1-half cup dark molasses
1 can (13 oz.) evaporated milk
Oven temperature: 425º
Bake: 15 minutes

Bake: 40 minutes
Slightly sweetened whipped cream
Servings: Six to eight

Prepare pastry shell with your favorite pastry mix and fit loosely into pie plate (9 in.), building up fluted edge as high as possible. In large bowl, beat eggs, blend in pumpkin, sugar, cinnamon, ginger, nutmeg, salt and molasses. Add evaporated milk, mixing well. Pour into readied pastry shell and bake in hot oven for 15 minutes to set the crust.
Reduce heat to moderate and bake until custard is set in center. Note that it will firm on cooling. Cool on rack to room temperature. Chill thoroughly in refrigerator, if desired. Serve with slightly sweetened whipped cream.
