1 1/2 teaspoon vanilla extract
2 sticks butter, softened
2 cups pure cane sugar
3 cups Swan's Down Cake Flour
1 tablespoon baking powder
5 egg whites

Directions:
Directions:
Grease and powder three 8 inch cake pans. Preheat oven to 350º. Cut 3 rounds of parchment paper to fit in the bottom of each cake pan. Whisk milk and vanilla together. In an electric mixer, beat butter until creamy. Add in sugar slowly, beating on low to medium until fluffy. Thoroughly combine the baking powder into the flour. Add this to the butter mixture slowly on low speed, alternating with the milk. Begin and end this process with the flour. Beat egg whites in another bowl with a hand mixer until stiff peaks form and fold into the batter. Thoroughly combine and pour into the cake pans evenly. Bake at 350º for 20-23 minutes or until a knife or cake tester comes out clean. Remove cakes to cook on wire racks for 10 minutes. Remove each to a clean wire rack and discard the parchment paper. Frost as desired.
