Cheesecake:
5 bricks cream cheese, 8 ounces
5 eggs
2 egg yolks
1 3/4 cups white sugar
1/8 cup all purpose flour
1/4 cup heavy whipping cream

Directions:
Allow all cold ingredients to come to room temperature. Preheat the oven to 400º. Combine 1/3 cup sugar, 1 1/2 cups flour, 1/2 cup butter and 1 egg. Spread evenly on the bottom and sides of the pan. Prick all over with a fork, then bake 15 minutes at 400º. Allow to cool. In a large electric mixer, beat cream cheese until creamy, scraping the sides and bottom with a spatula often. Add the eggs , one at a time, incorporating each. Then, add the egg yolks and let mix until smooth. Add the remaining 1 3/4 cups white sugar, flour and the heavy cream. Blend until smooth. Pour batter into prepared pan. Bake at 400º for 10 minutes, then turn oven temperature down to 200º and continue baking for 1 to 1 1/2 hours, or until filling is set. I judge this by the golden color on top and it may be closer to 2 hours. Turn the oven off without opening the door and allow to sit for 1 hour. Crack the oven door and allow to sit for 2 hours. Transfer to a wire rack for 30-45 minutes, then finally to the refrigerator for at least 4 hours.
