Noodles (1/2 pound) sweet potato or Chinese noodle
2 1/2 tsp. sesame oil
3/4 cup sliced onions
2 carrots (match sticks) or prepared matchsticks, about a cup
2 cloves garlic
3 stalks of green onions cut in 1" lengthwise
1/2 cup mushrooms
1/2 1 lb. spinach
3 T. soy sauce
3 T. honey
1 T. sesame seeds

Directions:
Directions:
Cook noodles according to directions. Toss with 1 tsp. sesame oil and set aside. In separate dish mix soy/honey together. Fry carrots and onions and then add mushrooms, green onions and garlic. Save spinach for last since it cooks quickly. Add soy sauce and honey mixture. Toss with remaining sesame oil and sprinkle with seeds.

You can buy noodles at the Asian Food store. You can get the translucent noodles made of sweet potato that make this dish classic. If not, another type of noodle will work. It's a great Asian dish that is sure to win people over.
