1 lb. fish fillets (any kind, although Tilapia is inexpensive and has a mild taste)
2 T. butter
2 t. dried minced onion (naturally I've been known to omit this!)
2 t. parsley flakes
1/2 t. dried basil, crumbled
1/4 t. salt
1/3 c. dry white wine (see substitution above)
1/4 c. water

Directions:
Thaw fish, Melt butter. Stir in other ingredients. Arrange fillets in dish with sides, turning once to coat. Cover with plastic wrap and microwave 6-9 minutes on high power or until fish flakes easily. rearrange fish after 1/2 the cooking time.

Be careful with the crushed red pepper—any more than 2 t. and it can be really hot!
