2 Bone in pork chops
1 Cup unsweetened applesauce
1/3 Cup dried cranberries
1/4 Cup fresh lemon juice
1 Tbsp dried rosemary, chopped
2 Cloves minced garlic
1 small apple, sliced
1 small onion, sliced
Salt and Pepper to taste
Ginger (optional)

Directions:
Directions:
Preheat oven to 300º.
Preheat a saute pan over medium high heat.
In a mixing bowl, combine and mix applesauce, cranberries, lemon juice, and rosemary.
Line bottom of baking dish with sliced onions.
Season both sides of pork chop with salt and pepper (optionally ginger).
Sear pork chops for 2-3 minutes on each side, then place on bed of onions.
Rub garlic on the pork chops.
Place sliced apples in a single layer on top of the pork chops.
Evenly spoon applesauce over the top of the pork chops and cover them entirely.
Cover the dish with aluminum foil and bake 30-60 minutes depending on the thickness of the meat.

I usually don't use big pork chops but I leave them in for about 45 minutes. The aluminum foil helps protect the meat from getting overcooked.
