1 peck tart apples, unpeeled
4 c water
10 c sugar (about)
2 tsp ground cloves
2 Tbsp ground cinnamon
1 tsp ground allspice

Directions:
Wash, quarter and cook apples with water. Cover, let simmer slowly until tender. Rub through course sieve*. Should be about 5 quarts of pulp. Add 1/2 as much sugar as pulp, add spices. Simmer about 2 hours in a heavy pot, stirring frequently as it will scorch easily. An asbestos mat placed under kettle will prevent scorching. When thickened, pour into hot sterilized jars; seal immediately. Apple butter becomes stiffer when cool. Delicious served on hot buttered toast. Makes 9 to 10 pints.



*Foley food mill is perfect for this. It is worth buying one if you ever make apple butter, applesauce, or unseeded raspberry jam.
