olive oil
3 cloves minced garlic
2 large carrots
1 red pepper, seeded
2 med zucchini
3 small yellow (summer) squash
salt and freshly ground pepper to taste

Directions:
Directions:
Cut carrots and red pepper into matchsticks. Cut peel of both kinds of squash off in long strips. Cut peel into matchsticks. Heat olive oil in large skillet or wok, saute garlic till golden. Add carrots and stirfry 1-2 minutes. Add red peppers and zucchini and stir fry for 1-2 minutes more. Add yellow squash and stirfry until crisp tender, do not overcook. Sprinkle with salt and pepper.
