1/2 cup butter
4 tablespoons grated onion
2 cups raw rice - Uncle Ben's is best
2 1/4 teaspoon salt
1/4 teaspoon pepper
2 cans beef consommé'
2 cups water
1 cup mushrooms, sautéed

Directions:
Directions:
Melt butter in large frying pan; add onions and cook slightly. Add rice, cook over slow heat, stirring until rice is golden brown. Add salt and pepper, stirring in thoroughly. Place in a 2 quart casserole. When ready to bake, add consommé, water and mushrooms. Mix gently. Cover and bake at 300 degrees for 1 hour and 15 minutes. Do not stir. Yields 8-10 servings. A family favorite.
