1 cup uncooked quinoa
2 cups chicken or vegetable broth
1 15oz can black beans drained and rinsed
1/2 cup corn (frozen thawed or canned)
1 small tomato chopped (about 1/2 cup)
1/4 cup chopped fresh cilantro or parsley
4 scallions chopped (about 1/4 cup) or red onion
1 Tbsp fresh lime juice
1 clove garlic finely chopped
1/4 tsp sea salt

1 - In 2qt. saucepan, heat broth to boiling. Add quinoa, reduce heat to low. Cover and simmer 15-20 minutes or until liquid is absorbed.

2 - Fluff quinoa with fork, stir in remaining ingredients. Cook uncovered about 3 minutes, stirring occasionally, until thoroughly heated.

3 - serve and enjoy!

This recipe is adapted from one on the livebetteramerica website. Original recipe called for a cup of canned beans, but there's no reason to not use the entire can. I've made a few other modifications (like suggesting parsley as an alternative to cilantro since Jan is allergic to cilantro).

John made this for me the other night and it was excellent - a recipe he picked up at the gym.
