a dozen of fresh raw oysters
1 lemon

1. Rinse the oysters and brush them to remove sand from the shells
2. Use oyster knife to open them, discard the top shell and place the bottom ones with oyster meat to a platter or tray, try to keep the juice with the shell
3. Cut the lemon into two halves and squeeze the juice to the oysters

Personally I love raw fresh oysters more than grilled ones. Lemon juice is the most easy sauce, spinach, lemon zest, and cream, or butter, garlic, capers, parsley, and anchovy are also wonderful sauces.

The oysters quality is important. I recommend Diana Seafood at warden and lowrance which provide fresh and multi options. You can ask the crew to choose your flavour, creamier or sweeter etc.
