3 lbs. potatoes
1/2 cup chopped fresh mint (or 1 Tbs. crushed dry mint)
1 small onion, chopped fine
1/3 cup vegetable oil
1/2 cup lemon juice, to taste
1 tsp salt
1/2 tsp pepper
1 cup chopped black olives

Directions:

Boil potatoes; cool and peel, then dice or mash. Combine the rest of ingredients except olives; mix well with potatoes. Add olives and garnish. Chill before serving.
