- 1 1/2 cups flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs
- 2/3 cups vegetable oil
- 1 cup carrots, grated
- 3/4 cups crushed pineapple (& juice)
- 1 teaspoon vanilla

Directions:
Directions:
Put oil into bowl. Add eggs and beat well. Add vanilla. In another bowl, mix dry ingredients. Add oil & egg mixture to dry ingredients. Stir and add carrots & pineapple.

Fill muffin tins, 2/3 full. Bake 350 for 25 minutes

3 x receipe EQUALS 19 OUNCE can of pineqpple crushed
