- 3/4 cup flour
- 1/4 cup cornstarch
- 1 tsp baking powder
- 3/4 tsp salt
- 3/4 cup water, cold
- 1 egg
- 2 pounds shrimp, raw
- fat to deep-fry

Directions:
Directions:
Measure flour, cornstarch, baking powder and salt into bowl. Mix
Beat water and egg together slightly in small bowl with a spoon. Pour into flour mixture. Stir to mix.
Hold shrimp by tail, dip in batter then drop into 375 F fat. Turn once. Remove when browned.

NOTES:


Remove shells, leaving tail. Remove dark vein from the back of shrimp. Cut inside curve of shrimp but not all the way through. Spread flat. This is a butterfly shrimp.
