2 eggs, beaten
1 cup brown sugar
3/4 cup shortening, melted
3/4 cup molasses
3 cups flour
1 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
1/4 tsp. salt
1 cup sour milk (1 cup milk with 1/2 tsp. vinegar)

Directions:
Directions:
Preheat oven to 375 degrees. Grease a 13/9x2 pan.
In a large bowl, combine eggs, brown sugar, shortening and molasses. Sift together flour, baking soda, ginger, cinnamon and salt. Add flour mixture, alternating with sour milk, to egg mixture. Beat until well mixed. Pour in prepared pan and bake 40-45 minutes or until toothpick inserted in center comes out clean. Serve warm with whipped cream, if desired. Serves 12.
