2 pkg. yeast
1/2 c. warm water
1/2 c. boiling water
3/4 c. instant potato flakes
1 tsp. salt
1/2 c. sugar
1/2 c. butter, softened
1/2 c. milk
3 large eggs
5 1/2 to 6 1/2 c. flour

Oven: 350º ~ Yield: 2 large or 3 small tea rings
Combine yeast and water; let stand 5 minutes. Combine boiling water, milk and potato flakes; add salt. Beat at medium speed. Add sugar, milk, and butter. Mix. Add eggs and yeast mixture; blend well. Stir in enough flour to make a soft dough. Knead on floured surface until smooth, 8 to 10 minutes. Place in a greased bowl, turning to grease top. Let rise until double. Punch down. Knead 4 to 5 times. Divide in portions. Roll each portion into a rectangle; spread with 1/4 c. softened butter. Sprinkle with cinnamon-sugar mixture and top with 1/2 c. pecans and 1/4 c. currants, if desired. Repeat for other portion(s). Roll rectangles up jelly roll fashion. Join ends to form a circle. Place on a greased baking sheet. Cut at 1-inch intervals to within 1 to 2 inches of center; turn each slice on its side. Cover; let rise 45 minutes. Bake; cover tops with foil if browning too quickly. Cool and glaze. May be decorated with citrons and pecan halves if desired. This dough handles easily and makes nice gifts at Christmas time. I place the rings on foil cake rounds and wrap with decorative plastic or basket wrap.

Cinnamon-Sugar Mix: 2/3 c. sugar mixed with 1 1/2 tsp. cinnamon

Glaze: 2 c. powdered sugar mixed with 1 T. milk and 1/2 tsp. vanilla
