1 c. sugar
1/4 c. cornstarch
1/4 c. flour
1/2 tsp. salt
3 c. milk, divided
4 eggs, separated
1 T. butter
1 tsp. vanilla

Directions:
Directions:
Oven: 350º
Combine sugar, cornstarch and flour. Stir in half the milk; mix well. Add remaining milk. Cook and stir over medium high heat till mixture is thickened and bubbly. Reduce heat; cook and stir for 2 minutes more. Remove from heat. Beat egg yolks lightly with a fork. Gradually stir about 1 cup of filling into yolks. Return all to saucepan; bring to a gentle boil. Cook and stir for 2 minutes more. Remove from heat. Stir in butter and vanilla. Pour the hot filling into baked pastry shell. Evenly spread meringue over hot filling; seal to edge. Bake about 15 minutes. Cool on a wire rack. Cover and chill to store.

Banana Cream Pie: Spread 3 medium, sliced bananas into the bottom of the baked pastry shell; then add filling.

Coconut Cream Pie: Add 1 c. flaked coconut with butter; sprinkle another 1/3 c. flaked coconut over meringue before baking.

Chocolate Cream Pie: Add 1/4 c. cocoa with flour and cornstarch.

For meringue, beat egg whites that are at room temperature with 1/4 tsp. cream of tartar until peaks form. Add 1/4 c. sugar gradually and beat until very stiff.
