2 cups flour
2 cups sugar
2 eggs
2 tsp. baking soda
1 cup coconut
1 20oz. can crushed pineapple with juice
FROSTING:
1 8oz. pkg. cream cheese, softened
1 1/2 cups powdered sugar
1 stick butter, softened
2 tsp. vanilla or coconut extract

Directions:

Mix cake ingredients and bake in 9x13 pan at 350 for 40-45 min. Allow to cool. Blend frosting ingredients and spread onto cooled cake. Sprinkle some coconut on top. Refrigerate any leftovers. VERY MOIST!
