1½ cups plus 2 tablespoons flour
¾ cup sugar
2 teaspoons baking powder
¼ teaspoon salt
¼ teaspoon nutmeg
½ cup milk
1 egg, beaten
1/3 cup butter, melted
1 teaspoon ground cinnamon
½ cup sugar
½ teaspoon vanilla extract
1/3 cup butter, melted

Directions:
Directions:
Preheat oven to 350 degrees. Combine the first five ingredients. Add milk, egg, and 1/3 cup melted butter. Mix thoroughly. Grease and flour muffin tins. Fill ½ full and bake for 20 minutes or until lightly browned. Remove from pan immediately and dip in remaining 1/3 cup melted butter and roll in a mixture of the remaining sugar, cinnamon and vanilla. Serve warm. These have the flavor of fresh doughnuts without the work. Makes 12 muffins. If you roll the entire muffin in the cinnamon and sugar, the muffin will stay fresh longer, but you might need more butter and more cinnamon and sugar to cover the muffin completely.
