2 c. flour
1/4 c. shortening
1 tbsp. double-acting baking soda
1 tsp. salt
2/3 c. milk
salad oil
cinnamon
powdered sugar

Directions:
Directions:
Combine the first 4 ingredients to coarse crumbs. Add milk until dough holds together. Turn onto a lightly floured surface and knead smooth - about 3 minutes. Roll into 2 12 X 9 rectangles and cut into 3 X 3 squares.
Fry 2 squares at once in salad oil. Turn with a slotted spoon as soon as they rise to the surface and until golden brown. Sprinkle with cinnamon and powdered sugar.

When I was a teenager, mom would take me to Lakeforest mall for ice skating lessons. We always had dinner at the Mexican restaurant in the mall across from the rink. That is where we discovered Sopapillas. Mom was determined to master this recipe and she did! -Christy
