1 cup wondra

1 1/2 cup of water

Filling:
1 lb ricotta
2 eggs
2 tsp parmesan cheese
1/2 lb of mozzarella
2 tsp of parsley
salt
pepper

preheat oven to 350º

-blend all ingredients for the SHELL until smooth, using a 6 inch skillet add a small amount of oil (wipe excess with a paper towel) over medium heat.
-Add one LARGE spoonful of batter when top appears dry and sides in pan separate - turn out on absorbent paper towel.
-Repeat until all the batter is used.

-blend all the ingredients for the FILLING except the sauce-place a spoonful of filling on each shell.
-in Baking dish put 1/2 cup sauce and spread on the bottom.
roll up and place seam side down on baking dish, put sauce and mozzarella cheese on top and continue with rest of shells.
Cover with more sauce top with mozzarella cheese and bake at 350º until cheese melts (approximately 20 minutes

To Freeze:
Sprinkle foil with farina thaw before baking
