2 1 lb. blocks of butter
4 cups of chopped onions
1 cup diced bell peppers
20 ounces of flour
2 cans (12 ounces) of evaporated milk
1 cup of water
1 - 3 pound block of cream cheese
2 cups of shredded cheddar cheese
4 pounds of chopped boiled 110/130 shrimp (water seasoned with Tony’s)
4 pounds of crab meat (special white or claw)
2 cups of green onions sliced
1 cup of chopped parsley

Directions:
Directions:
Sauté vegetables until clear and tender add flour to make a paste; add evaporated milk and water stirring until smooth. Cool slightly; add cream cheese, cheddar cheese, shrimp, crab meat, green onions and parsley, one at a time. Mix until smooth and let mixture cool. Fill croissants and bake for 15 minutes. This will make about 50 three inch Croissants.
