1 cup sifted flour
1/2 tsp salt
2 eggs
1 cup milk
2 tbsp melted butter

Directions:
Directions:
Combine flour, salt, and eggs; mix well. Add milk and butter, beating until mixture is smooth. Refrigerate batter at least 2 hours. Brush crepe pan or a 6 inch skillet with oil. Heat over medium heat until just hot but not smoking. Pour in 3 tbsp batter, quickly tipping pan to cover entire bottom evenly and thinly. Cook crepe about 1 minute; lift edge to test for doneness. When lightly browned, flip over and cook about 30 seconds on other side. Stack crepes between layers of waxed paper to prevent sticking. Crepes freeze well. Stack; wrap in foil or plastic with edges tightly sealed. Defrost at room temperature before separating.
