1 lb of medium spice sausage
4­5 small to medium potatoes
1­2 cans of white beans (white chili or garbanzo)
Small bunch of spinach or kale, chopped
2 cans of chicken broth
Parmesan cheese (not shaker type)
Red pepper flakes (only if you like it spicy)

Directions:
Directions:
Cook up your sausage, and drain. Peel and cut potatoes into bite sized cubes, place in large pot and boil until almost done and drain. Add chicken broth and sausage to the potatoes. Let these simmer (you may add red pepper at this point) about 15 minutes. Then add beans (drained) allow another 5-10 minutes to simmer. Once to this point, add spinach until wilted nice in a soup. When serving, sprinkle Parmesan cheese on top, serve with crusty bread or garlic toast.
