8 oz. Black eye peas
1 cup diced green pepper
1/4 cup diced pimento
1 cup diced onion
1/2 cup finely chopped green onions
2 T. chopped garlic
1/4 cup finely chopped jalapeno chilies(amt. optional)
1 cup Italian dressing( start with somewhat less)
salt and pepper to taste

Directions:

Soak peas in cold water to cover overnight.
Drain and rinse.
Cover with fresh water and bring to a boil.
Reduce heat, cover and simmer 1 hr. or longer, until tender.
Do Not Overcook.
Drain, rinse, and drain again.
Mix with remaining ingredients.
Chill well overnight.
