3 boneless, skinless chicken breasts cut into 1 inch cubes
3/4 lbs andouille sausage (or cajun-style sausage) sliced
1 can diced tomatoes
1 can crushed tomatoes
1 can tomato paste
1 large onion, chopped
1 large green bell pepper, chopped
1 cup chopped celery
1/2 teaspoon hot pepper sauce
2 teaspoons dry oregano
1 1/2 teaspoon worcestershire sauce
2 bay leaves
1 tablespoon cajun seasoning
1/2 teaspoon cayenne pepper
1 teaspoon minced garlic

3 cups water or chicken broth
1 1/2 cups white rice

Directions:
Directions:
1. Cook rice separately in water or chicken broth.

2. Saute chicken in pan with small amount of oil.

3. Onion, pepper, and celery should be started in large deep pan or pot with small amount of olive oil.

4. When vegetable are tender, add all other ingredients together.

5. Complete by adding cooked rice last.
