2 lbs of trimmed green beans
4 tbsp. vegetable oil
1/4 c. minced fresh ginger (about 6" root peeled)
4 minced garlic cloves

Directions:
Directions:
Boil green beans in water until slightly tender, but crisp and bright green, then plunge in ice water bath. Drain on paper towels. (You can prepaer this the day before up to this point, refrigerated and wrapped in paper towels). Cook 1 lb at a time. Put 2 tbsp oil in pan, add half beans, half ginger and half garlic, stirring and tossing constantly until beans are heated through and ginger and garlic are soft and aromatic. Sprinkle with salt and remove to serving dish. Repeat with remainder of ingredients.
