Ingredients: Crust 1 3/4 cups white flour 1/4 cup granulated sugar 1/4 tsp cinnamon 1/2 cup ground almonds 1/2 cup butter
Filling 3 eggs separated 1/2 cup brown sugar 3 tbsp brandy 1 tbsp grated lemon rind 6 cups thinly sliced peeled apples, about 7 1 cup apricot preserves 3 tbsp brandy 1 tbsp lemon juice
Meringue
pinch salt 3 tbsp sugar 1/2 cup sliced almonds

Directions:Mix flour, sugar, cinnamon and salt into a medium bowl. Mix in ground almonds and butter until course crumbs form. Reserve 1 cup of the mixture. Pat remainder into a buttered springform pan to line bottom and sides. Bake crust at 350 for 20 minutes or until brown. Leave oven on.
Beat egg yolks with brown sugar, brandy and lemon rind. Add the sliced apples. Toss to mix well. Spoon the apple mixture into the crust and sprinkle with the reserved crumb mixture. Return to the oven and bake 55 minutes or until browned.
Combine apricot preserves with brandy and lemon juice and spread over the apples. Beat the egg whites with the salt until foamy. Keep beating gradually adding sugar until the meringue forms stiff glossy peaks. Spread the meringue over the apples and sprinke with sliced almonds. Return cake to oven and bake until meringue is a delicate golden brown, 5 to 10 minutes. Watch carefully |
