8 dove breasts
8 slices smoked bacon
Monterey and Pepper Jack cheese, cubed
Italian dressing
Worcestershire sauce

Directions:
Directions:
Soak fresh dove breasts in cold, salted water overnight. Place meat on cutting board. With a sharp knife, cut breasts away from center bone on each side just enough to open up or "butterfly" the breast. Place piece of cheese on each side (one of each flavor, or whatever flavor you like). Holding breast together, wrap it in bacon and secure with large toothpick. Mix enough dressing and worcestershire sauce to marinate the birds. Place on indirect low heat on the grill for about 20 minutes, turning once. Check often to make sure bacon grease doesn't cause flames...don't want these delicacies to burn!
