1 cup buttermilk
1 tsp. soda
5 eggs
1 stick butter
1/2 cup shortening
2 cups sugar
2 cups self-rising flour
1 tsp. vanilla
1 small can coconut
1 cup chopped pecans
Icing:
1 8oz. pkg. cream cheese, softened
1/2 stick butter, softened
1 tsp. vanilla
1 box powdered sugar

Directions:
Directions:
Preheat oven to 350. Cream butter, sugar and shortening. Add eggs, one at a time, beating well. Add vanilla and blend. Mix soda with buttermilk and add to mixture, alternating with flour. Fold in nuts and coconut. Pour into 3 greased and floured round cake pans. Bake for 30 min. Allow to cool completely before frosting.
Icing: Cream together butter and cream cheese. Add vanilla. Slowly add powdered sugar and beat well after each addition. After cake layers have been removed from pans and cooled, spread layer of icing over tops and stack. Then finish spreading icing all over. Fabulous cake!
