2/3 c butter at room temperature
1 ½ c sugar
3 eggs
1 tsp vanilla
2 ½ c all purpose flour
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
½ c cocoa
1 c water
1 c sauerkraut minced finely

Orange Cream Frosting

1 – 3oz pkg cream cheese softened
1 tbsp butter or margarine
½ tsp grated orange peel
1 ½ c sifted icing sugar
1 – 2 tbsp milk if needed

Directions:
Preheat over to 350 F. Cream together the butter and sugar. Add the eggs one at a time. Mix in the vanilla. Sift together the flour, baking powder, baking soda, salt and cocoa. Add 1/3 of the flour mixture and a third of the water to the butter and sugar. Mix until blended. Continue adding the flour and water alternately until batter is well blended. Rinse the sauerkraut and squeeze out excess water and juice. Stir sauerkraut into the cake batter. Butter and flour 2 - 9” round cake pans. Pour ½ the batter into each prepared pan. Bake for 35 minutes or until cake tests done. Allow cake to cool. Frost with cream cheese frosting or whipping cream.
