1 lb. boneless skinless chicken breasts, cubed
3 Tbsp. soy sauce
1 Tbsp. oil, divided
1/2 red onion, thinly sliced
1 each red and green pepper, thinly sliced
1/3 cup fresh cilantro, chopped
4 cloves garlic, minced
1 jalapeņo pepper, seeds removed, minced
1/2 cup chicken stock
2 Tbsp. tequila
2 Tbsp. lime juice
1 cup whipping cream
2 lbs. fresh spinach fettuccine

Directions:
Directions:
Combine chicken and soy sauce in a bowl and chill. Heat 1 tsp oil in skillet over medium heat and saute onion and peppers until tender. Remove from pan. In the same skillet, heat remaining oil and add cilantro, garlic and jalapeņo. Cook for 2 to 3 minutes. Add chicken stock, tequila and lime juice. Bring to a boil and cook until liquid has evaporated. Add chicken, soy sauce and cream to skillet. Bring to boil, stirring constantly, and cook until chicken is done and sauce is thick, 7-10 minutes. Stir in onion and peppers. Cook fettuccine in boiling water. Drain and toss with sauce.
