2 lb. boneless, skinless chicken thighs
1 lb. smoked sausage, cut in 2" pieces
1 chopped onion
1 chopped green bell pepper
3 stalks celery, chopped
1 can diced tomatoes with liquid
3 cloves garlic, minced
2 cans chicken broth
1 Tbsp. Tony's Creole seasoning
1 tsp. each of thyme & oregano
1 lb. peeled shrimp
1 1/2 cups rice
Parsley (optional)

Directions:
Directions:
Combine everything in slow cooker except for the shrimp, rice and parsley. Cook on low for 5 hours. Add other ingredients, and cook on high 30-45 min.
